One of my favorite parts about Valentine’s Day is sharing delicious sweet treats with loved ones. What better way to spend time with the ones you love than baking and sharing this cake with them?!

Made From Scratch Valentine’s Day Cake Ingredients

Organic sprouted spelt flour – when whole grains are sprouted, this breaks down antinutrients to increase the bioavailability of the vitamins and minerals present, for your body to better absorb them.

Coconut sugar – is a natural sweetener I like to use in my baked goods. Just be mindful this sugar will turn your batter brown.

Sea salt – enhances the flavor of other ingredients.

Unsalted butter – when choosing butter, try to opt for unsalted, pasture raised butter for highest quality.

Eggs – pasture raised eggs are the best, highest quality eggs to purchase.

Valentine’s Day Cake

This Valentine's Day Cake is one of the easiest and tastiest cakes I've ever made. Impress your sweetheart by baking this cake to share with them this Valentine's Day!

Ingredients

Valentine's Day Cake

  • 2 ½ cup organic spelt flour
  • 1 ⅓ cup coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon sea salt
  • 1 tablespoon vanilla extract
  • 1 cup coconut milk
  • ½ cup unsalted butter pasture raised
  • 2 pasture raised eggs

Frosting

  • ¼ cup unsalted butter pasture raised
  • 1 ½ cup organic powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut milk

Instructions

  • Preheat the oven to 350 F. Grease and flour two 8-inch round cake pans.  
  • In a medium sized mixing bowl, combine the spelt flour, coconut sugar, baking powder and salt. Mix well.
  • In a separate medium sized mixing bowl, combine vanilla extract, coconut milk, butter, and eggs. Mix well.
  • Gently fold the dry ingredients within the wet.
  • Divide the batter evenly between the baking pans. Bake for 25 to 30 minutes or until a toothpick inserted in the center of the cakes come out clean.
  • Cool in the pans for 10 minutes. Remove cakes from pans and cool completely on wire racks before frosting

Frosting

  • In a medium bowl, whisk together the melted butter, powdered sugar, vanilla extract, and coconut milk.
  • Frost the top and sides of the cake with the prepared topping. 
  • Cut raspberries in half and strawberries in the shape of a heart. Enjoy!
