4-Ingredient Banana Pancakes

The best part about this recipe is that only four ingredients are needed. It’s also a great way to use up those brown bananas sitting on your countertop!

  1. Banana – use brown bananas as they will mash easier and provide a sweeter flavor.
  2. Pasture raised eggs – use two eggs for each banana you use in this recipe. The eggs help to bind everything together while also providing a good source of protein and healthy fats!
  3. Vanilla extract – adds a sweet, delicate flavor.
  4. Ceylon cinnamon – adds a sweet, woody flavor.

How to Make These Banana Pancakes

  1. Mix all ingredients together. Be sure to mash the bananas to your desired texture.
  2. Heat a lightly oiled cast iron pan over medium heat. Scoop the batter onto the cast iron, using 1/4 cup to scoop. The key is to make sure the pan is hot before scooping the batter! If your pancakes are too runny, it may indicate the pan is not hot enough – patience is key with this recipe!
  3. Cook until pancakes are golden brown, 3 to 5 minutes per side.
  4. Top with berries, peanut butter, chia seeds, etc. Enjoy! These toppings will add more protein, healthy fats, fiber, and antioxidants.
