  • Heat a lightly oiled cast iron pan over medium high heat. Scoop the batter onto the cast iron, using 1/4 cup to scoop. The key is to make sure the pan is hot before scooping the batter!
  • Cook until pancakes are golden brown, 3 to 5 minutes per side.
  • Top with berries, peanut butter, chia seeds, etc. Enjoy!
