This Farmers Market Veggie Frittata is one of my favorite recipes to make for lazy summer Sundays. This versatile dish has no bad combination of peak season veggies, goat cheese, and pasture raised eggs.
What better way to get your ingredients for this recipe than going to your local farmers market?! Here, you can find a variety of veggies, along with an array of herbs, pasture raised eggs, and perhaps even goat cheese to stock up on!
Depending on what month you are visiting the farmers market, different veggies may be more abundantly available. Spend time walking through the market to determine what veggies look best to you. Use this recipe as a guideline, but feel free to swap veggies for others that seem appealing.
The only other ingredients you will need are pantry staples, which include both avocado oil and sea salt. And let’s not forget about the toppings! Sprinkle more goat cheese on top, add chopped cilantro, sliced avocado, or a dollop of fresh salsa.
The Farmers Market Veggie Frittata is packed with flavor and nutrition. The pasture raised eggs and goat cheese provide an array of vitamins, minerals, protein, and healthy fats. The variety of veggies not only add an array vitamins and minerals, but also antioxidants and phytonutrients.
I recommend pairing this frittata with a slice of sourdough bread or a side of fruit to incorporate a complex carbohydrate to balance out this meal. This would then make for a great post-workout meal!
