When purchasing canned goods, opt for the low sodium option. I also recommend rinsing the canned good product to remove even more sodium.

Lentils are an excellent source of fiber, plant protein and B vitamins. However, be sure to sprout them to neutralize the phytic acid, which will ultimately allow more nutrients such as the B vitamins to be better absorbed.

Ingredients

  • 1 pound ground beef grass-fed
  • 1 tablespoon avocado oil
  • 1 small yellow onion minced
  • 1 teaspoon garlic minced
  • 32 ounces beef broth low sodium
  • 12 ounces tomato paste
  • 28 ounces diced tomatoes
  • 8 ounces tomato sauce
  • 2 cup butternut squash frozen
  • 1 cup corn frozen
  • 1 cup lentils sprouted
  • 15.5 ounces kidney beans rinsed
  • ½ teaspoon cayenne pepper
  • ½ teaspoon chili powder
  • ½ teaspoon Cajun
  • ½ teaspoon Italian seasoning
  • black pepper to taste
  • sea salt to taste

Instructions

  • Sprout the lentils as explained in the section above. Make sure to do this beforehand so the lentils will be ready.
  • Place the ground beef in a large pan, cook over medium heat until browned. Drain off the excess fat.
  • In a large pot, add in avocado oil, minced onion and garlic. Cook for five minutes or until fragrant.
  • Add the browned ground beef to the pot along with the remaining ingredients, combining well.
  • Bring the liquid to a boil, then reduce heat to medium-low and let simmer uncovered, stirring occasionally.
  • Remove the pot from the heat. Let the chili rest for 5-10 minutes before serving. Add your favorite toppings and enjoy!
