This Crispy Chicken with Sun-Dried Tomato Sauce is a staple dinner meal thanks to its delicious flavor and quick cook time.
To make the tastiest crispy chicken, be sure to thoroughly coat the chicken on each step of the breading process. I highly recommend using Italian bread crumbs for additional flavor.
If you’re making enough for leftovers, be sure to store in an airtight container in the fridge for 2-3 days. Be mindful, the chicken will lose it’s crispy texture. However, reheating this chicken in the oven or on the stovetop will hold for a better texture.
This meal makes for a fun Italian themed dinner date night! Pair it with a salad for a filling meal.
CHICKEN. After cleaning your chicken, pound with a meat mallet to flatten. Set aside. Prepare the breading process by putting the flour, eggs, and bread crumbs into their separate bowls. In a cast iron pan, add avocado oil over medium heat. Begin the breading process by adding the chicken to the bowl with flour, then egg, and lastly the bread crumb bowl. Carefully add the chicken to the oil and cook on both sides until golden brown and the chicken has reached 165℉. This should take about 3-5 minutes on each side.
PASTA. While the chicken is cooking, begin preparing your pasta according to box directions.
SUN-DRIED TOMATO SAUCE. In a separate pan, begin preparing the Sun-Dried Tomato Sauce. Add all ingredient over low heat. Allow to simmer until chicken and noodles are prepared.
SERVE. Cut your chicken into strips and place over your cooked pasta and sauce. Enjoy!
