Ingredients

Crispy Chicken

  • 2 chicken breasts
  • ½ cup organic flour
  • 2 eggs
  • ¾ cup Italian bread crumbs
  • ¼ cup avocado oil
  • egg noodles

Sun-Dried Tomato Sauce

  • 4 tablespoons unsalted butter
  • 1 teaspoon minced garlic
  • 3 tablespoons lemon juice
  • 2 tablespoons capers
  • ½ cup sun-dried tomatoes

Instructions

  • After cleaning your chicken, pound with a meat mallet to flatten. Set aside.
  • Prepare the breading process by putting the flour, eggs, and bread crumbs into their separate bowls.
  • In a cast iron pan, add avocado oil over medium heat.
  • Begin the breading process by adding the chicken to the bowl with flour, then egg, and lastly the bread crumb bowl.
  • Carefully add the chicken to the oil and cook on both sides until golden brown and 165℉. This should take about 3-5 minutes on each side.
  • While the chicken is cooking, begin preparing your pasta according to box directions.
  • In a separate pan, begin preparing the Sun-Dried Tomato Sauce. Add all ingredient over low heat. Allow to simmer until chicken and noodles are prepared.
  • Cut your chicken into strips and place over your cooked pasta and sauce. Enjoy!
