This summertime inspired Strawberry Chicken Salad with Red Wine Vinaigrette Dressing is loaded with fresh fruit, goat cheese, and chicken. The combination of flavor is impeccable!

Ingredients Used to Create this Dish

To prepare the most flavorful, juicy chicken, I recommend purchasing pasture raised chicken. Looking for a clean source of hormone and antibiotic free chicken is key for a source of lean protein packed with nutrients and flavor.

I tend to typically use Chosen avocado oil when I am cooking. Avocado oil has a higher smoke point when compared to other oils, making it a great option when cooking. I also enjoy the flavor of avocado oil, so I tend to use it in salad dressings as well, such as the red wine vinaigrette used in this recipe.

Strawberries and spinach are listed as number one and two on the dirty dozen list. Meaning, they contain residues of potentially harmful pesticides. If possible, purchase organic strawberries and spinach. I also highly recommend cleaning your produce with the vinegar soaking method to remove excess dirt and bacteria.

When choosing goat cheese, pick whatever flavor you prefer! I tend to switch it up between fine herb goat cheese to fig balsamic goat cheese.

How to Easily Prepare the Strawberry Chicken Salad with Red Wine Vinaigrette Dressing

  1. Marinate your chicken overnight or for 10 minutes if you are in need of a quick meal.
  2. Meanwhile, begin mixing together your dressing in a mason jar. Refrigerate until use. This dressing does last in the fridge for 3-5 days. However, using it sooner will provide for a more fresh flavor.
  3. Carefully place the marinated chicken onto the preheated grill, grilling until each side is golden brown, about 10-12 minutes. The internal temperature should read 165° F when done.
  4. While the chicken is cooking, begin to assemble your salad. Create a bed of spinach and arugula mix, topped with strawberries, sliced almonds and crumbled goat cheese.
  5. Once the chicken has finished cooking, remove from the grill and let sit for 5 minutes. Slice into 1-inch pieces.
  6. Top your salad with chicken and drizzle on some red wine vinaigrette dressing. Enjoy!

Ingredients

Lemon Herb Chicken Marinade

  • 4 tablespoons avocado oil
  • 2 lemon juiced
  • 4 tablespoons red wine vinegar
  • 2 tablespoon oregano
  • black pepper per preference

Red Wine Vinaigrette Dressing

  • ½ cup avocado oil
  • ¼ cup red wine vinegar
  • 2 tablespoons sesame seeds
  • 1 tablespoon white onion
  • ¼ teaspoon balsamic vinegar glaze
  • ¼ teaspoon paprika

  • 3-4 chicken breasts pasture raised
  • 4 cups spinach and arugula mix
  • 3 cups strawberries
  • ¼ cup sliced almonds
  • 4 ounces goat cheese crumbled

Instructions

  • Marinate your chicken overnight or for at least 10 minutes.
  • While your chicken in marinating, begin mixing your dressing in a mason jar. Refrigerate for at least one hour until use.
  • Place the marinated chicken onto a preheated grill, grilling until each side is golden brown, about 10-12 minutes each side. The internal temperature should read 165° F when done.
  • While the chicken is cooking, begin to assemble your salad. Create a bed of spinach and arugula mix, topped with washed strawberries, sliced almonds and crumbled goat cheese.
  • Once the chicken has finished cooking, remove from the grill and let sit for 5 minutes. Slice into 1-inch pieces.
  • Top your salad with the cooked chicken and drizzle on some red wine vinaigrette dressing. Enjoy!
