Ingredients

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 green bell pepper
  • ½ English cucumber
  • ¼ cup small purple onion
  • ½ cup black beans
  • 4 small cherry tomatoes
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar

Instructions

  • Pre-cut all vegetables into small, bite-sized pieces.
  • Place all vegetables into a medium sized bowl. Mix in red wine vinegar and balsamic vinegar. Mix well.
  • You may serve immediately or chill until serving time.

Notes

Refrigerate this recipe. Stays fresh for 3-4 days but tastes better the sooner it is consumed. If you make too much dip, incorporate it into a pasta salad, use as a side dish, taco topping, meat marinate or topping, omelet filling or toast topping.
