These good old-fashioned pancakes made from scratch are a favorited weekend staple. They’re easy to prepare, quick to cook, and absolutely delicious. Not to mention, they freeze well, too!

If you’re anything like me, you love breakfast foods. Everything from pancakes, to oatmeal, to breakfast bagels, to egg tacos. You can’t go wrong with any of these choices! And the best part, they all take less than 30 minutes to prepare.

Breakfast Menu: Pancakes Made From Scratch

We always look forward to the weekend for a good breakfast spread. This usually entails homemade pancakes, fruit, scrambled eggs, and either sausage or bacon. By adding the other additions, this ensures we’re hitting our macros, creating a balanced meal that will keep us full and satiated for the next few hours.

When making these pancakes, we always double or triple the portions to ensure we have leftovers to enjoy for the next 1-2 days.

How to Make these Homemade Pancakes:

  1. In a mixing bowl, combine the milk, melted butter, eggs, and vanilla extract. Stir well.
  2. Slowly add in the flour, coconut sugar, baking powder, flaxseed meal, and sea salt. Stir until all ingredients are well combined.
  3. Place a cast iron skillet over medium heat. Sprinkle a few drops of water onto the skillet to test if it’s ready. The water droplets will dance around a bit and evaporate when ready.
  4. Brush the skillet with melted butter.
  5. Scoop the batter onto the skillet using a 1/4 cup measure and spread each pancake into a 4-inch circle.
  6. After 1 to 2 minutes, the edges will look dry, and bubbles will form and pop on the surface. Flip the pancakes and cook for another 1 to 2 minutes until lightly browned and cooked in the middle.
  7. Serve immediately with your favorite toppings and sides. Enjoy!

How to Freeze & Reheat these Pancakes:

You can store these pancakes in an airtight container in the fridge for up to a week, or freeze them for up to 2 months. If freezing, allow the pancakes to cool completely, then separate them with parchment paper before placing them in a freezer-friendly bag. When ready to reheat, place them in a toaster – enjoy!

  • 3 tablespoons coconut sugar
  • 2 teaspoons flaxseed meal
  • 1 teaspoon baking powder
  • 1 dash sea salt
