Servings: 10 pancakes
- 1 ¾ cup milk grassfed
- ¼ cup butter unsalted
- 2 eggs pasture raised
- ½ teaspoon vanilla extract
- 2 cups organic flour
- 3 tablespoons coconut sugar
- 2 teaspoons flaxseed meal
- 1 teaspoon baking powder
- 1 dash sea salt
In a mixing bowl, combine the milk, melted butter, eggs, and vanilla extract. Stir well.
Slowly add in the flour, coconut sugar, baking powder, flaxseed meal, and sea salt. Stir until all ingredients are well combined.
Place a cast iron skillet over medium heat. Sprinkle a few drops of water onto the skillet to test if it’s ready. The water droplets will dance around a bit and evaporate when ready.
Brush the skillet with melted butter.
Scoop the batter onto the skillet using a 1/4 cup measure and spread each pancake into a 4-inch circle.
After 1 to 2 minutes, the edges will look dry, and bubbles will form and pop on the surface. Flip the pancakes and cook for another 1 to 2 minutes until lightly browned and cooked in the middle.
Serve immediately with your favorite toppings and sides. Enjoy!
