Good Old-Fashioned Pancakes Made from Scratch

These good old-fashioned pancakes made from scratch are a favorited weekend staple. They're easy to prepare, quick to cook, and absolutely delicious. Not to mention, they freeze well, too!

Ingredients

  • 1 ¾ cup milk grassfed
  • ¼ cup butter unsalted
  • 2 eggs pasture raised
  • ½ teaspoon vanilla extract
  • 2 cups organic flour
  • 3 tablespoons coconut sugar
  • 2 teaspoons flaxseed meal
  • 1 teaspoon baking powder
  • 1 dash sea salt

Instructions

  • In a mixing bowl, combine the milk, melted butter, eggs, and vanilla extract. Stir well.
  • Slowly add in the flour, coconut sugar, baking powder, flaxseed meal, and sea salt. Stir until all ingredients are well combined.
  • Place a cast iron skillet over medium heat. Sprinkle a few drops of water onto the skillet to test if it’s ready. The water droplets will dance around a bit and evaporate when ready.
  • Brush the skillet with melted butter.
  • Scoop the batter onto the skillet using a 1/4 cup measure and spread each pancake into a 4-inch circle.
  • After 1 to 2 minutes, the edges will look dry, and bubbles will form and pop on the surface. Flip the pancakes and cook for another 1 to 2 minutes until lightly browned and cooked in the middle.
  • Serve immediately with your favorite toppings and sides. Enjoy!
