And lastly, drizzling maple syrup over the stack of French toast for the finishing touch on a delicious breakfast.

Ingredients

  • 3 tablespoons coconut milk
  • 1 pasture raised egg
  • ¼ teaspoon vanilla extract
  • dash pumpkin pie spice
  • 2 slices brioche bread

Instructions

  • Heat a lightly oiled skillet over medium heat.
  • Whisk coconut milk, egg, vanilla extract, and pumpkin spice in a medium sized bowl.
  • Soak one slice of brioche bread in the mixture, then place on the heated skillet. Repeat this step for the remaining slices of bread.
  • Cook the bread until golden brown, about three minutes on each side. Top with coconut whipped cream, fresh fruit, and maple syrup. Enjoy!
