These Roasted Delicata Squash Fries are both delicious & crispy. They’re a perfect side for a variety of dishes!

Crispy & crunchy roasted delicata squash fries.

Instead of making russet potato or sweet potato fries, try making these delicata squash fries! They add great flavor to any meal and are a nice change from the typical homemade fries. Be sure to keep the skin on for a crunchy texture.

Ingredients Needed to Make these Roasted Delicata Squash Fries

Just three ingredients are needed to prepare this delicious side!

  1. Delicata squash – you can find delicata squash late summer through early winter at grocery stores and farmers markets.
  2. Avocado oil – I recommend using avocado oil due to its high smoke point.
  3. Sea salt – adds the perfect flavor to these delicious, roasted fries!

How to Prepare these Fries

Use these four simple steps to create a delicious side that can be used within a variety of meals!

  1. Preheat the oven to 450° F.
  2. Wash the squash, cut it in half lengthwise and scoop out the seeds. Be sure to keep the seeds!
  3. Cut each half into ¼-½-inch slices. Place into a bowl and drizzle with avocado oil, sprinkling sea salt on top. Mix well.
  4. Line a baking sheet with parchment paper and place the squash on the sheet in a single layer. Roast for about 20 to 25 minutes until tender and slightly browned. Enjoy!

What to do with the Remaining Delicata Squash Seeds

Instead of throwing away the seeds, I highly recommend making Delicata Squash Seeds. They’re both crunchy & salty for a perfect appetizer or snack between meals. Not to mention, these roasted delicata squash seeds taste just like popcorn, in my opinion, and contain a good amount of fiber, plant protein, calcium, and magnesium.
