What to do with the Remaining Delicata Squash Seeds

Instead of throwing away the seeds, I highly recommend making delicata squash seeds. They are both crunchy & salty for a perfect appetizer or snack between meals. Not to mention, these roasted delicata squash seeds taste just like popcorn, in my opinion, and contain a good amount of fiber, plant protein, calcium and magnesium.

Roasted Delicata Squash Fries

These roasted delicata squash fries are both delicious & crispy. They're a perfect side for a variety of dishes!

Servings: 2 servings



  • Preheat the oven to 450° F.
  • Wash the squash, cut it in half lengthwise and scoop out the seeds.
  • Cut each half into ¼-½-inch slices. Place into a bowl and drizzle with olive oil, sprinkling sea salt on top. Mix well.
  • Line a baking sheet with parchment paper and place the squash on the sheet in a single layer. Roast for about 20 to 25 minutes until tender and slightly browned. Enjoy!
