The Tastiest Crockpot Chicken Fajitas

The Crockpot Chicken Fajita is an easy, yet delicious meal to make during those busy weeks. Just dump all the ingredients into a crockpot, stir every few hours, and you have a meal ready to go!

Perks of Using A Crockpot

I personally love using my crockpot. There is nothing better than being able to throw ingredients together, turn the crockpot on, and walk away. This is the perfect piece of kitchen equipment to use during those busy weeks!

I use my crockpot year-round as it saves time and is also energy efficient. This form of cooking allows the ingredients to simmer all day, enhancing the flavor of the dish. Specific to this recipe, the chicken is given the time to soak up the flavors from the vegetables and spices to create the perfect, juicy chicken every time.

You may place the heat on low and let the Crockpot Chicken Fajitas simmer for 4-6 hours. Or if preferred, you may place the heat on high and have the meal done within 2-3 hours.  

Additional Crockpot Chicken Fajita Ingredients

For an extra boost of flavor, I like to add fresh salsa and the Fresh & Easy Guacamole as toppings. Or if you prefer, you could serve both the salsa and guacamole as an appetizer with chips.

Refried beans are another great addition to this meal. Nutritionally, refried beans contain fiber, protein, iron, magnesium, and zinc. Be aware that refried beans can be high in sodium, so opt for the low sodium option, and rinse the beans before preparing them.

If you have leftovers, store them in an airtight storage container. Consume the leftovers within 3-4 days for optimal freshness.

Ingredients

  • 4 chicken breast pasture raised
  • 4 large tomatoes
  • 1 white onion
  • 2 bell peppers
  • 1 lemon
  • 2 tablespoons Italian seasoning
  • 2 tablespoons cajun seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cumin
  • black pepper to taste

Instructions

  • Clean the chicken. Roughly chop tomatoes, onion, bell peppers, and lemon. Place ingredients into crockpot.
  • Combine spices into a small bowl, mixing well. Sprinkle the seasonings evenly over the chicken and veggies in crockpot.
  • Cover and cook on HIGH heat about 2 – 3 hours or LOW heat 4 – 6 hours, until chicken has cooked through and veggies are tender.
  • Remove chicken and cut into strips or shred it. Assemble the fajita with your favorite toppings and enjoy!
