Fresh Veggies to Include on these Greek-Inspired Kebabs

A wide array of veggies may be used when creating your kebabs. Be creative with the combination!

Cut the veggies of your choice into one-inch pieces. Cut them small, as they will cook for the same amount of time as the meat.

How to Make Greek-Inspired Kebabs with Homemade Tzatziki Sauce

Greek-Inspired Kebabs

  1. Toss chicken and vegetables in avocado oil, dill, salt, and black pepper. Let marinate for 20 minutes.
  2. When ready, alternate chicken and veggies on your skewers.
  3. Place the kabobs on a preheated grill at medium-high heat, and cook for about 4 to 5 minutes per side. The kebabs will be done when the chicken is cooked through and the vegetables are lightly charred, about 15-20 minutes.
  4. Sprinkle crumbled herbed goat cheese and dill over the cooked kebabs.
  5. Serve with lemon wedges and tzatziki sauce. Enjoy!

Three Tips For Creating the Tastiest Kebabs

  1. Cut the chicken into one-inch pieces before placing them in the marinade. This will make the assembling of the kebabs easier.
  2. Cut the veggies into bite-sized pieces. Keep in mind the kebabs are only on the grill for about 15-20 minutes, so cut the veggies small enough so they are fully cooked by the time the kebabs are taken off the grill.
  3. If you’re using wooden skewers, soak them in water before assembling the kebabs so they do not burn.
