To prepare the most flavorful, juicy chicken, I recommend purchasing pasture raised chicken. Looking for a clean source of hormone and antibiotic free chicken is key for a source of lean protein packed with nutrients and flavor.

The ghee used also helps to keep the chicken moist. For this recipe specifically, I love using garlic infused ghee to boost the garlic flavor. Feel free to also spread the ghee over the cherry tomatoes for a mouth-watering side.

You can butterfly your chicken breasts. However, keep in mind that the garlic head does take around 35-45 minutes to get to its desired texture. If you do butterfly your chicken, I would recommend placing the garlic in a separate cooking pan.

Ingredients

  • 2 chicken breasts pasture raised
  • 1 garlic head
  • 1 cup cherry tomatoes diced
  • 2 tablespoons ghee garlic infused
  • Italian seasoning
  • oregano

Instructions

  • Preheat the oven to 400° F. Clean the chicken and place it in a pan.
  • Cut the cherry tomatoes in half, place into the pan.
  • Peel and discard the outer layers of the garlic head, cutting off the top end. Wrap in foil.
  • Evenly spread the ghee and sprinkle Italian seasoning and oregano over the ingredients.
  • Place in the oven for 35-40 minutes or until the chicken gets to an internal temperature of 165° F and the garlic cloves turn a light brown. Enjoy!
