Beet juice is made from beets, a root vegetable that is packed with antioxidants, electrolytes, and minerals. Because beet juice is packed with anti-inflammatory properties, this juice can promote a multitude of health benefits.

What to Be Mindful Of

When it comes to health, too much of one thing is not often suggested. I recommend consuming my Beet Juice Mocktail once or twice per week, tops. Be mindful, your urine or bowel movements may turn pink or red, due to the coloring of the beets. If you have a history of developing calcium oxalate kidney stones, I recommend talking to your provider before adding beet juice to your routine. This is because beet juice contains oxalates, which will bind to calcium and prevent it from being absorbed in the body, increasing the risk of developing kidney stones.

How to Make this Beet Juice Mocktail

My recipe to create this Beet Juice Mocktail includes just four ingredients. These include:

For best flavor, I recommend placing the rosemary or mint leaves in the bottom of your serving glass, along with your lemon slices. Muddle the ingredients together, then add in a handful of ice, beet juice and sparkling water. If you prefer, garnish with extra rosemary/mint and lemon wedges. Enjoy!

Ingredients

  • rosemary or mint sprigs
  • lemon slices
  • 4 ounces organic beet juice
  • 4 ounces sparkling water

Instructions

  • Place a few rosemary or mint leaves in the bottom of a glass. Juice the lemon, muddling both together.
  • Add a handful of ice cubes, then pour over the beet juice and sparkling water. Garnish with additional rosemary/mint and lemon wedges if desired.
