What is Bok Choy?

Bok choy is a leafy green vegetable, also known as Chinese cabbage. It’s in the same family as other cruciferous vegetables including broccoli, cauliflower, cabbage, and brussels sprouts. The entire plant is edible and makes for a delicious ingredient as a side or a main ingredient. Bok choy can be braised, grilled, stir fried, and roasted. It adds the perfect crunchy texture to a variety of meals!

Bok choy is primarily made up of water. However, it also contains a good amount of vitamins A, K and C. If you plan to cook bok choy, I highly recommend cooking it within the first two days of purchasing for peak freshness. You can find bok choy at most grocery stores and local farmers markets.
