The ingredients used in this recipe include a variety of veggies. If you don’t have all the listed veggies at home, feel free to swap for those that you do have. Ultimately, there is no wrong variety of veggies to add to the egg mixture. If you have zucchini, carrots, swiss chard, or asparagus to use up, throw them in!

If you prefer to have the sandwich without bacon, you may scramble the egg mixture in a sauté pan.
However, if you do prefer to add the bacon, preheat the oven to 450°F. Place both the bacon and egg combination in the oven for about 15-20 minutes, or until done. Enjoy!
