These No Bake Pumpkin Seed Energy Bites are a great midday snack, and make for a great addition to any hiking or camping trip! These energy bites are packed with nutrients that will provide you with an energy boost to get you through the day.

No Bake Energy Bites

This is a snack that is quick and easy to make with ingredients likely already in your pantry. All you need to do is throw the ingredients into a bowl, mix well, roll into bite-sized balls, and freeze. These are tasty enough to replace any dessert!

No Bake Energy Bite Variations

Many variations of no bake energy bites exist. Experiment with the ingredients you have in your pantry and make up your own creation!

Use a different nut butter such as almond butter, walnut butter, cashew butter, hazelnut butter, or macadamia butter.

Incorporate some dried cherries or blueberries for some tartness.

Add some chia seeds or hemp seeds to increase protein.

Add ground ceylon cinnamon, ground ginger, cocoa powder, or vanilla extract to add additional flavor.

When creating a new variation of no bake energy bites, three ingredients are required. This includes a main filling such as sprouted rolled oats, a nut butter to bind the ingredients, and a liquid sweetener such as maple syrup or honey to increase sweetness. In addition, add other ingredients you would enjoy for increased flavor.

No Bake Pumpkin Seed Energy Bites

Ingredients

Instructions

  • Melt peanut butter.
  • Combine and mix all wet ingredients into a medium-sized bowl.
  • Grind pumpkin seeds, dark chocolate and slivered almonds until fine (I use a coffee grinder).
  • Combine and mix all dry ingredients into a seperate medium-sized bowl.
  • Pour wet ingredients into the bowl containing the dry ingredients, mix well. I find it easier to mix the combination with my hands.
  • Roll mixed ingredients into one-inch diameter balls, makes about 20 energy bites. Place onto a cookie sheet and freeze for 30 minutes.
  • Move energy bites into an airtight container and store in the freezer for 1-2 weeks.

Notes

I prefer to store my energy bites in the freezer for a frozen treat. However, you may also store in the fridge for 1-2 weeks for a chewier snack. Enjoy!
