The Ultimate Egg Sandwich is by far the healthier alternative to McDonald’s fast-food favorite, the bacon & egg mcmuffin. With a variety of veggies used to create this sandwich, you will feel energized and satisfied to start the day.

Ingredients Used to Make The Ultimate Egg Sandwich

The ingredients used in this recipe include a variety of veggies. If you don’t have all the listed veggies at home, feel free to swap for those that you do have. Ultimately, there is no wrong variety of veggies to add to the egg mixture. If you have zucchini, carrots, swiss chard, or asparagus to use up, throw them in!

Don’t be fooled by marketing. Read this article to learn the difference between caged, cage-free, free-range, and pasture-raised eggs. This will provide a better understanding on why I always recommend pasture raised eggs.

Grass fed bacon is also specified in this recipe. We purchase our bacon from a local, sustainable farmer. If you are interested in finding a grass fed farmer near you, review this site.

Lastly, the avocado adds the perfect, creamy texture to any sandwich. Avocados are a great source of omega-3 fatty acids, which are important fats and essential to get within the diet. They help reduce inflammation, promote brain health, and also help to increase your HDLs (the good cholesterol).

How to Make The Ultimate Egg Sandwich

If you prefer to have the sandwich without bacon, you may scramble the egg mixture in a sauté pan.

However, if you do prefer to add the bacon, preheat the oven to 450°F. Place both the bacon and egg combination in the oven for about 15-20 minutes, or until done. Enjoy!

Ingredients

  • 3-4 slices bacon grass-fed
  • 4-6 eggs pasture raised
  • 1 tablespoon onion
  • 1 tablespoon bell pepper
  • 1 teaspoon mushroom
  • 1 tablespoon cherry tomato
  • 2 English muffins
  • 1 handful spinach
  • 1 small avocado

Tomato Balsamic Sauce

  • 2 teaspoons avocado oil
  • 10 cherry tomatoes
  • teaspoon garlic minced
  • 1 teaspoon balsamic vinegar
  • black pepper, to taste

Instructions

  • Preheat the oven to 450° F. Lightly grease a large muffin pan. Set aside.
  • Line a baking tray with parchment paper, then place the bacon evenly on the tray.
  • Place the bacon in the oven until it reaches your desired level of crispiness, about 18-20 minutes.
  • Whisk the eggs, onion, bell pepper, mushrooms, and tomatoes together in a medium-sized bowl.
  • Pour the egg combination into the greased pan, place into the oven and bake for 15-20 minutes or until the center is set. Try not to overcook the eggs.
  • Meanwhile, begin to prepare the Tomato Balsamic Sauce. Oil a medium-sized skillet with avocado oil. Add in the roughly chopped cherry tomatoes.
  • Add the garlic, balsamic vinegar, and black pepper to the skillet. Set the heat to medium-low and let the sauce saute until desired consistency is reached, about 10 minutes.
  • While the eggs, bacon and sauce are cooking, toast your English muffin in a toaster.
  • To assemble the sandwich, spread the Tomato Balsamic Sauce over both sides of the muffin, place the egg mixture on top, a small handful of spinach, avocado, bacon, and the top of the muffin. Enjoy!

Notes

Meal prep tip: make extra bacon and egg mixture to eat throughout the week, consuming within 3-4 days for optimal freshness.
