- 4 chicken breast pasture raised
- 4 large tomatoes chopped
- 1 white onion chopped
- 2 bell peppers chopped
- 1 lemon chopped
- 2 tablespoons Italian seasoning
- 2 tablespoons cajun seasoning
- 1 teaspoon red pepper flakes
- 1 teaspoon cumin
- black pepper to taste
Clean the chicken. Roughly chop tomatoes, onion, bell peppers, and lemon. Place ingredients into slow cooker.
Combine spices into a small bowl, mixing well. Sprinkle the seasonings evenly over the chicken and veggies in slow cooker.
Cover and cook on HIGH heat about 2 - 3 hours or LOW heat 4 - 6 hours, until chicken has cooked through and veggies are tender.
Remove chicken and cut into strips or shred it. Assemble the fajita with your favorite toppings and enjoy!
