Preheat the oven to 375℉. Grease a 12-muffin tin with baking spray and set aside.
In a large mixing bowl, beat the butter, coconut sugar, and maple syrup on medium speed until creamy, about 2 minutes. Add the eggs, one at a time, beating until well combined. Scrape down the bowl and beat in the vanilla and milk.
Slowly add the flour, baking powder, cinnamon, and salt. Stir until well combined.
With the mixer on low speed, fold in the apples.
To prepare the streusel topping, add the ingredients into a medium sized bowl. Use a pastry cutter (or fork), to cut in butter until the topping is crumbly and coarse.
Fill prepared muffin cups with batter. Top each muffin with streusel topping, about 1 tablespoon each. Bake until golden brown, about 30 minutes. Cool muffins on a rack for several minutes before removing from pan. Enjoy!
