Ingredients

Greek-Inspired Kebabs

  • 1.5 pounds chicken breast cubed
  • 1 yellow squash cut into 1-inch pieces
  • 1 zucchini cut into 1-inch pieces
  • 1 red onion cut into 1-inch chunks
  • 1 orange bell pepper cut into 1-inch pieces
  • 1 red bell pepper cut into 1-inch pieces
  • 1 roma tomato cut into 1-inch pieces
  • avocado oil
  • fresh dill per preference
  • sea salt per preference
  • black pepper per preference

Homemade Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ cup cucumber thinly diced
  • ½ lemon freshly squeezed
  • 1 teaspoon avocado oil
  • 1 garlic clove minced
  • fresh dill per preference
  • sea salt per preference

Greek-Inspired Kebabs Toppings

  • herbed goat cheese crumbled
  • fresh dill
  • lemon wedges

Instructions

Greek-Inspired Kebabs

  • Toss chicken and vegetables in avocado oil, dill, salt, and black pepper. Let marinate for 20 minutes.
  • Alternate chicken and veggies on your skewers.
  • Place the kabobs on a preheated grill at medium-high heat, and cook for about 4 to 5 minutes per side. The kebabs will be done when the chicken is cooked through and the vegetables are lightly charred, about 15-20 minutes.
  • Sprinkle crumbled herbed goat cheese and dill over the cooked kebabs.
  • Serve with lemon wedges and tzatziki sauce. Enjoy!

Tzatziki Sauce

  • In a medium bowl, combine all ingredients. Mix well. Chill until ready to serve. Enjoy!
