- 1.5 pounds chicken breast cubed
- 1 yellow squash cut into 1-inch pieces
- 1 zucchini cut into 1-inch pieces
- 1 red onion cut into 1-inch chunks
- 1 orange bell pepper cut into 1-inch pieces
- 1 red bell pepper cut into 1-inch pieces
- 1 roma tomato cut into 1-inch pieces
- avocado oil
- fresh dill per preference
- sea salt per preference
- black pepper per preference
Homemade Tzatziki Sauce
- 1 cup Greek yogurt
- ½ cup cucumber thinly diced
- ½ lemon freshly squeezed
- 1 teaspoon avocado oil
- 1 garlic clove minced
- fresh dill per preference

Greek-Inspired Kebabs
Toss chicken and vegetables in avocado oil, dill, salt, and black pepper. Let marinate for 20 minutes.
Alternate chicken and veggies on your skewers.
Place the kabobs on a preheated grill at medium-high heat, and cook for about 4 to 5 minutes per side. The kebabs will be done when the chicken is cooked through and the vegetables are lightly charred, about 15-20 minutes.
Sprinkle crumbled herbed goat cheese and dill over the cooked kebabs.
