- 3 bananas brown
- 6 pasture raised eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ceylon cinnamon
In a medium sized bowl, mash the bananas until smooth. Add in the eggs, vanilla extract, and cinnamon, mixing well.
Heat a lightly oiled cast iron pan over medium heat. Scoop the batter onto the cast iron, using 1/4 cup to scoop. The key is to make sure the pan is hot before scooping the batter!
Cook until pancakes are golden brown, 3 to 5 minutes per side.
Top with berries, peanut butter, chia seeds, etc. Enjoy!
