Ingredients
½cuporganic peanut buttermelted
¼cupmaple syrup
¼cupwater
¼cup pumpkin seedsground
¼cupdark chocolateground
¼cupslivered almondsground
½cuporganic flour
2tablespoonsground flaxseed
1 cupsprouted rolled oats
Instructions
Combine the peanut butter, maple syrup, and water into a medium sized bowl.
Grind pumpkin seeds, dark chocolate, and almonds until fine (I use a coffee grinder).
Once ground, add the pumpkin seeds, dark chocolate, and almonds into the medium sized bowl with wet ingredients.
Add in the flour, flaxseed, and rolled oats. Be sure to combine well - I find it easier to mix the combination with my hands.
Roll mixed ingredients into one-inch diameter balls. Place on a cookie sheet and freeze for 30 minutes.
Store in an airtight container in the freezer for 1-2 weeks. Enjoy!
Notes
I prefer to store my energy bites in the freezer for a frozen treat. However, you may also store in the fridge for 1-2 weeks for a chewier snack. Enjoy!
