Sweet Chicken Ramen Bowl

Ingredients

  • 1-2 chicken breasts pasture raised
  • 1 tablespoon avocado oil
  • 1 dash black pepper
  • 1 tablespoon ghee garlic-infused
  • ¼ teaspoon garlic minced
  • 4 teaspoons coconut aminos
  • 16.9 ounces chicken bone broth
  • 4 teaspoons coconut sugar
  • 1 teaspoon rice vinegar
  • ¼ teaspoon Worcestershire sauce
  • 4 soft boiled eggs pasture raised
  • 2 packets ramen noodles
  • chives chopped, for serving

Instructions

  • Preheat the oven to 400° F. Clean the chicken. Drizzle avocado oil and sprinkle black pepper over the chicken.
  • Bake for 30-40 minutes or until the internal temperature reaches 165° F.
  • If you want your chicken to have a crispier texture, broil the chicken for a few minutes until you reach your desired texture.
  • Meanwhile, add the ghee and garlic to a medium sized pot on medium-low heat. Heat until fragrant.
  • Combine the coconut aminos, chicken bone broth, coconut sugar, rice vinegar, Worcestershire sauce and simmer for 20-30 minutes.
  • Fill a separate medium sized pot with cold water. Place 4 eggs within the pan, adding more water so the eggs are covered by an inch of water.
  • Turn the heat on high and bring the water to a rolling boil. Keep them at a rolling boil for 6-8 minutes for a soft boiled egg.
  • Immediately dump the hot water out of the pot, running cold water over the eggs to stop the cooking. Let them sit for a while to cool.
  • Once cooled, peel the eggs under some running water.
  • While everything is cooking, begin to boil your ramen noodles. Complete this step according to the ramen package.
  • To assemble the Sweet Chicken Ramen Bowl, add the ramen noodles to a serving bowl.
  • Pour over some broth, add in a serving of chicken, a soft boiled egg, and sprinkle over some chopped chives. Enjoy!
