- 1 yellow bell pepper
- 1 red bell pepper
- 1 green bell pepper
- ½ English cucumber
- ¼ cup purple onion
- 4 small cherry tomatoes
- ½ cup black beans
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar
Pre-cut all vegetables into small, bite-sized pieces.
Place all vegetables and black beans into a medium sized bowl. Mix in red wine vinegar and balsamic vinegar. Mix well.
