Peanut Butter Cookies

The Peanut Butter Cookies are a fun homemade treat. They are packed with flavor but contain less than half the typical amount of both fat and sugar for a healthier cookie option.

Ingredients

  • ½ cup organic peanut butter melted
  • ¼ cup unsalted butter grass fed
  • ½ cup honey
  • 1 egg pasture raised
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 ½ cup organic flour
  • ½ teaspoon baking soda
  • ¼ pinch sea salt

Instructions

  • Preheat oven to 350° F.
  • In a large bowl, whisk together the peanut butter, butter, honey, egg, vanilla extract and almond extract.
  • Place the flour, baking soda, and sea salt into a medium sized bowl.
  • Gently fold in the dry ingredients. Combine well until the dough is thick and soft.
  • Chill overnight for the chewiest, tastiest peanut butter cookies!
  • When ready, roll about 1.5 tablespoon of cookie dough into a ball. Use a fork to make a crisscross indent on top of each.
  • Bake the cookies for 12-15 minutes or until the cookies have turned a golden brown.
  • Remove from oven and let cool. Enjoy!

Notes

Cookies will stay fresh at room temperature for one week. You may also freeze the cookies for up to three months.
