For the marinade: combine all ingredients in a medium sized bowl, mix well.
Cut your choice of meat into one-inch pieces and place within a gallon-sized resealable bag, pouring the marinade into the bag. Let the meat marinade refrigerated overnight, or for four to six hours. If making shrimp kebabs, discard the shell and veins before adding to the marinade.
Cut the veggies and fruit into bite-sized pieces, making them small enough so they cook on the grill in a short amount of time. You may either marinade the veggies and fruit with the Teriyaki Kebab Marinade, or you may drizzle them with avocado oil, salt and black pepper. Let them marinade refrigerated overnight, or for four to six hours.
If you're using wood skewers, soak them in water while the meat and produce are marinating so they do not burn.
When the meat and produce are done marinating, begin assembling the kebabs. Have fun with this step! There is no correct order in which the meat, veggies, and fruit should be placed.
For the Steak Teriyaki Kebabs and Chicken Teriyaki Kebabs, place them on the grill for 8-10 minutes, flipping halfway through. If you are making the Shrimp Teriyaki Kebabs, grill the shrimp on separate kebabs as they will only require 2-3 minutes on each side. Enjoy!
