- ½ tablespoon pasture raised butter unsalted
- organic cherry tomatoes chopped
- green onions chopped
- 3-4 pasture raised eggs scrambled
- 1 tablespoon herbed goat cheese crumbled
- 1 pinch sea salt
- 2 tortilla wraps
Heat the butter in a pan on medium-low heat. Chop the cherry tomatoes and green onions. Add both to the pan and sauté until fragrant.
Whisk the eggs, pouring into the pan. Using a spatula, move the eggs while they cook.
Crumble the goat cheese, mixing within the scrambled eggs. Sprinkle in some sea salt.
Continue moving the egg mixture with the spatula. The eggs will be done when they're soft and pillowy, yet cooked through.
Assemble the breakfast tacos by adding a portion of the egg mixture to a tortilla, then sprinkling chopped green onions on top. Add any additional toppings per preference. Enjoy!
