- 15 ounces organic pumpkin puree
- 2 eggs pasture raised
- ½ cup peanut butter
- ½ cup coconut sugar
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup organic flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin spice
- ½ teaspoon ceylon cinnamon
- ½ teaspoon sea salt
- ¾ cup baking chocolate chips
Preheat oven to 350° F.
In a large bowl, whisk together the pumpkin puree, eggs, peanut butter, coconut sugar, maple syrup, and vanilla extract.
In a small bowl, combine flour, baking soda, pumpkin spice, cinnamon, and sea salt.
Gently fold in the dry ingredients, then the chocolate chips.
Coat a 6-cup loaf pan and pour in batter. Bake for 55 minutes or until a butter knife comes out clean.
