Ingredients

  • 15 ounces organic pumpkin puree
  • 2 eggs pasture raised
  • ½ cup peanut butter
  • ½ cup coconut sugar
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup organic flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • ½ teaspoon ceylon cinnamon
  • ½ teaspoon sea salt
  • ¾ cup baking chocolate chips

Instructions

  • Preheat oven to 350° F.
  • In a large bowl, whisk together the pumpkin puree, eggs, peanut butter, coconut sugar, maple syrup, and vanilla extract.
  • In a small bowl, combine flour, baking soda, pumpkin spice, cinnamon, and sea salt.
  • Gently fold in the dry ingredients, then the chocolate chips.
  • Coat a 6-cup loaf pan and pour in batter. Bake for 55 minutes or until a butter knife comes out clean.
  • Allow the pumpkin bread to cool for at least 30 minutes. You may store it at room temperature. Enjoy!
