Ingredients

  • 1 pound pork sausage pasture raised
  • ½ cup purple onion diced
  • ½ cup cherry tomatoes diced
  • ½ cup mushroom diced
  • 1 cup sweet potatoes frozen
  • 2 cups spinach
  • 18 eggs pasture raised
  • 1 cup milk
  • ½ cup goat cheese crumbled
  • 1 tablespoon avocado oil
  • ½ teaspoon garlic minced
  • 1 teaspoon turmeric
  • black pepper to taste

Instructions

  • Preheat the oven to 350° F. Spray a 9"x13" pan with cooking spray. Set aside.
  • Heat a large skillet over medium heat. Add the sausage and cooked until browned, crumbling into small pieces during the process. Drain most of the grease, then place the sausage in the 9"x13" pan.
  • Dice the purple onion, cherry tomatoes, and mushrooms, combining these ingredients with the sausage in the 9"x13" pan. Add the sweet potatoes and spinach.
  • In a separate large bowl, crack the eggs, adding the milk, goat cheese, avocado oil, garlic, turmeric and black pepper. Stir well.
  • Combine the egg mixture to the 9"x13" pan, make sure to mix well.
  • Place the egg bake in the oven for an hour, or until the edges are set and the center is barely jiggly.
  • Let the egg bake rest for 5-10 minutes before serving. Enjoy with avocado and fresh salsa!
