Ingredients
3-4slicesbacongrass-fed
4-6eggspasture raised
1tablespoononion
1tablespoon bell pepper
1teaspoonmushroom
1tablespooncherry tomato
2English muffins
1handfulspinach
1smallavocado
Tomato Balsamic Sauce
2teaspoonsavocado oil
10cherry tomatoes
⅛teaspoongarlicminced
1teaspoonbalsamic vinegar
black pepper, to taste
Instructions
Preheat the oven to 450° F. Lightly grease a large muffin pan. Set aside.
Line a baking tray with parchment paper, then place the bacon evenly on the tray.
Place the bacon in the oven until it reaches your desired level of crispiness, about 18-20 minutes.
Whisk the eggs, onion, bell pepper, mushrooms, and tomatoes together in a medium-sized bowl.
Pour the egg combination into the greased pan, place into the oven and bake for 15-20 minutes or until the center is set. Try not to overcook the eggs.
Meanwhile, begin to prepare the Tomato Balsamic Sauce. Oil a medium-sized skillet with avocado oil. Add in the roughly chopped cherry tomatoes.
Add the garlic, balsamic vinegar, and black pepper to the skillet. Set the heat to medium-low and let the sauce saute until desired consistency is reached, about 10 minutes.
While the eggs, bacon and sauce are cooking, toast your English muffin in a toaster.
To assemble the sandwich, spread the Tomato Balsamic Sauce over both sides of the muffin, place the egg mixture on top, a small handful of spinach, avocado, bacon, and the top of the muffin. Enjoy!
